Our Processing Options
How a coffee cherry is processed after harvest completely transforms the flavor in your cup. We offer three distinct methods, each showcasing a different side of our Boquete terroir:
 
Wet Process (Washed): The fruit skin and pulp are completely removed with water before the beans are dried. This highlights the true estate profile, yielding an incredibly clean, crisp cup with vibrant acidity and distinct clarity of flavor.
 
Honey Process: The skin is removed, but the sticky fruit flesh (mucilage)—resembling a layer of honey—is left on the bean during drying. This infuses the coffee with a mellow, balanced sweetness, a creamy mouthfeel, and subtle fruity undertones.
 
Natural Process: The coffee cherries are dried whole, completely intact with the fruit skin and pulp. As they dry, the beans absorb the sugars from the fruit, resulting in a heavy-bodied, intensely complex cup bursting with bold fruit flavors and deep sweetness.
