Enjoy coffee fresh from our latest harvest. We hand select only the finest Arabica coffee beans and ship directly to you. This specialty coffee comes from the mountains in Boquete and is single-estate and shade grown on our small family farm. From our farm straight to your cup, we hand process and roast small batches so that you have the freshest coffee possible!
Roasts
Light Roast - The beans are light to medium brown in color with no oils on them. The bean is still expanding and acidity dominates.
City Roast - This is a medium roast, the beans are medium brown in color with no oils on them, acidity level decreases. Also known as Breakfast or American Roasts.
Full City - This is a medium dark roast, the beans are darker in color and have some oils on them, perfect balance of acids and sugars.
French - This is a dark roast, the beans are dark brown, almost black in color and are covered in a sheen of oil, also known as Italian, Espresso, New Orleans, Continental or Spanish Roasts.
Processing Type
Wet (Washed) Processed
The cherries are picked off of the trees, the skins are removed and then they sit in water until the fleshy cherry fruit can be washed off of the cherry pit. They are then dried and the coffee bean is removed from outer layer known as the parchment. This is normally described as a cleaner tasting coffee.
Honey Processed
The cherries are picked off of the trees, the skins are removed and then they are set out to dry. The fleshy cherry fruit dries onto the cherry pit. After it is fully dry, the dried fruit and parchment is removed to get to the coffee bean. This method is known to have a more complex taste.
